Freezer Pickles

Mom gave me the recipe for freezer pickles.  Friends are liking them!  Here it is:

7 cups sliced cucumbers
1 cup chopped green pepper
1 cup chopped onion

Mix together:
1-2 cups sugar
1 cup vinegar (white)
1 t celery seed
2 T salt

Pour over cukes and let stand in fridge for 3 days. Stir once per day.

Pour in containers and freeze
(You may want to alter sugar &vinegar to equal parts)
(Can also add 2T dry dill if you wish)

This reminds me of my grandpa, who put the cukes into barrels as a kid to make pickles in the early 1900s!  Here is a photo of grandpa Pete circa 1910.

  1. I’ll pass on any kind of pickles, but that doesn’t mean these wouldn’t be good for a pickle lover–hehe! 😉

  2. Thanks for the recipe! I love sweet pickles and not having to can them is a big plus when it is hot outside!. Love that photo of your grandpa. 🙂

  3. Love the picture of your grandpa!

These are my favorite bread and butter pickles. They are what my grandma would have made: http://michaelbeyer.wordpress.com/2010/08/17/your-classic-bread-and-butter-pickles-2/
